Crepes!
I made crepes for dinner tonight, in honor of national pancakes day. Surprisingly considering how much I like pancakes, this was my first time cooking them. The recipe I used if from The Joy of Cooking, an extremely handy book. The pancakes turned out excellent, so I'm recording the ingredients here for future reference:
Simple Crepes
Dry Ingredients:
3/4 cup flour
1/2 tsp. salt
1 tsp. baking soda
2 Tbsp. powdered sugar
Wet Ingredients:
2 eggs
2/3 cup milk
1/3 cup water
1/2 tsp. vanilla extract
Sift dry ingredients together, beat wet ingredients together, combine and stir. Cook with a few drops of oil per pancake (less if a nonstick pan).

I totally missed pancake day. I was too busy schooling XD
